
Yayladağı — Limestone Slopes
Yayladağı holds Hatay's second-largest olive area after Altınözü. From the limestone slopes of Kel Dağ we source olive oil in every grade.
With 6,160 hectares under olive, Yayladağı alone accounts for roughly a fifth of Hatay's total olive area — the province's second-largest after Altınözü. The district holds more than 1.6 million trees and produces 22,507 tonnes a year. In the wider picture of Hatay zeytinyağı, this southern pocket represents an essential agricultural pillar, shaped directly by its geography, rugged elevation, and generational farming tradition.
Olive is the district's leading crop
In much of Hatay olive comes second to cotton or citrus. Yayladağı is different: by planted area, olive is the first crop. The local economy rests directly on this tree. Where flatter alluvial plains prioritize row crops, Yayladağı's undulating hillsides leave little room for heavy industrial farming. Instead, parcel after parcel across the villages is dedicated to olive cultivation.
Because the local livelihood depends so heavily on this single crop, families manage both table fruit and milling operations simultaneously. A portion of the harvest is reserved for table olives (salamuralık sofralık zeytin), while the bulk moves toward the press. Harvesting is largely manual, carried out by families who knock and comb the fruit onto ground nets before gathering them into crates. In an economy tied directly to harvest success, the timing of collection dictates whether a family's yield becomes high-grade culinary oil or utility-grade stock.
Kel Dağ and limestone
The district climbs the limestone slopes of Kel Dağ on the Syrian border. Limestone soil suits olive: it drains rather than holds water, it does not drown the root, and the calcium it carries supports fruit structure. The high permeability of fractured rock ensures that winter precipitation filters away from the root zone quickly, reducing the risk of fungal rot and aeration stress.
The trade-off is that irrigation and mechanised care are difficult on stony hillsides. Tractors cannot easily navigate the steep gradient of Kel Dağ's foothills, making deep tillage, terracing, and automated harvesting practically impossible on many parcels. Water retention in the upper topsoil is minimal during the dry summer months, forcing tree roots to seek moisture deep within limestone fractures.
We write that plainly for a reason: although Yayladağı's area is vast, its yield per hectare is among the lowest in the province. These groves are working below their potential. Investment in pruning, care and irrigation would noticeably lift what the same trees deliver. When orchards lack regular canopy maintenance or supplemental watering during fruit set, fruit size remains smaller and alternate bearing cycles become more pronounced. Yet, this stress also yields smaller olives with concentrated aromatic compounds, rewarding early harvest (erken hasat) picking with remarkably distinct natural profiles.
What we source here
Produce from Yayladağı spans a wide range. Batches from early-harvested, well-kept groves are separated as extra virgin (natürel sızma zeytinyağı); late or stored batches fall into virgin (natürel birinci zeytinyağı). Oils testing high in free acidity are suited to refining and are handled on the refined (rafine zeytinyağı) and olive oil (riviera) (riviera zeytinyağı) side.
When olives are gathered from remote hillside terraces, transport time to the extraction facility becomes critical. If olives sit in sacks under warm ambient conditions, enzymatic degradation begins, and free fatty acids rise before the fruit ever reaches the malaxer. In contrast, olives brought immediately to cold press (soğuk sıkım) systems at temperatures below 27°C maintain their cellular integrity, low free acidity (serbest asitlik), and delicate flavor profile.
