Known across regional markets as a cornerstone of Mersin zeytinyağı production, Mut zeytinyağı carries an aromatic structure shaped directly by its geographical seclusion and distinct regional ecology.
The microclimate of the Göksu valley
Mut sits in the Göksu valley, ringed by the Taurus Mountains. Inland and sheltered by high peaks, the basin is known for its marked contrast between hot days and cool nights — a contrast that builds the fruit's aromatic compounds and phenolic depth, the source of Mut oils' fruity, distinctive profile.
The geography acts as a natural barrier against excessive coastal humidity. While coastal Mediterranean groves frequently contend with persistent dampness, the Göksu river basin maintains dry, circulating winds. This low humidity naturally restricts the spread of common orchard pests, reducing the need for aggressive interventions. However, the high summer heat and rugged terrain present their own agricultural challenges: water management requires constant vigilance, and the steep slopes make mechanised harvesting difficult in many pockets of the valley.
The extreme diurnal temperature variation directly impacts fruit respiration. During warm daylight hours, the olive tree synthesises sugars and fatty acids; during the sudden chill of the mountain night, the metabolic rate slows, locking in volatile aromas. This dynamic gives oils from the region their signature herbaceous bitterness and persistent peppery finish on the palate.
Harvesting in the Göksu basin: From early harvest to cold extraction
The processing window in Mut is strictly governed by temperature and harvest timing. When the fruit begins to turn from green to straw-yellow, early harvest (erken hasat) operations begin. Olives picked at this stage yield lower oil volumes per kilogram of fruit, but the extracted oil possesses high antioxidant levels, elevated polyphenol counts, and minimal free acidity (serbest asitlik).
To preserve these intrinsic qualities, immediate processing is mandatory. Once detached from the branch, the cellular walls of the olive start to degrade, exposing internal fats to atmospheric oxygen and endogenous enzymes. If harvested olives sit in high valley temperatures for more than a few hours, hydrolytic breakdown begins, causing free acidity to rise and creating sensory defects. Cold extraction (soğuk sıkım) practices, maintaining malaxation temperatures strictly below 27°C, safeguard fragile aromatic esters and prevent thermal degradation during extraction.
Classification and laboratory evaluation in Düziçi
Every batch of olive oil we source from the Göksu valley undergoes systematic physical and chemical categorization before entering our supply inventory. We evaluate lots based on free fatty acid parameters and sensory profiles to assign each volume to its proper commercial tier:
- Natürel sızma zeytinyağı (Extra virgin olive oil): Premium early and mid-season lots with flawless sensory markers and exceptionally low free acidity, chosen for direct culinary use and raw consumption.
- Natürel birinci zeytinyağı (Virgin olive oil): Balanced oils with mild fruitiness and slight acidity variance, suitable for medium-heat cooking, traditional recipes, and daily kitchen preparation.
- Rafine zeytinyağı (Refined olive oil): Neutral, high-smoke-point oils produced by refining higher-acid crude batches, ideal for industrial food production and commercial frying applications.
- Riviera zeytinyağı: A functional blend of refined olive oil and quality virgin olive oil, offering a light character for all-purpose cooking.
- Salamuralık sofralık zeytin (Brined table olives): Selected firm-fleshed, hand-harvested table olives (sofralık zeytin) cured naturally in traditional brine.
Initial lot screening and serbest asitlik measurements are conducted on-site in our own dedicated facility in Düziçi. Our internal testing is designed solely for rapid batch verification, grower settlement, and logistical routing; it provides practical operational data rather than accredited official certification.
