Olive oil quality is settled by numbers, not by opinion. When a producer sells without knowing which grade their oil falls into, both the producer and the wider industry lose out. That is why we opened our laboratory to the region: producer, trader or restaurant — whoever you are, bring your sample and we will analyse it free of charge.

    Free Acidity

    % oleic acid

    The most fundamental quality indicator. It reveals how quickly the olives were processed after harvest and how sound the fruit was.

    Extra virgin: ≤ 0.8%

  • Free

    K232

    specific absorbance

    An indicator of primary oxidation — it shows whether the oil has entered the first stage of deterioration.

    Extra virgin: ≤ 2.50

  • Free

    K270

    specific absorbance

    Measures secondary oxidation, revealing breakdown products such as aldehydes and ketones.

    Extra virgin: ≤ 0.22

  • Free

    Delta-K (ΔK)

    calculated value

    The adulteration test. It exposes whether refined oil has been blended into virgin oil — proof of purity.

  • Why free?

    Because when the quality of oil produced in our region rises, all of us gain. Oil that has been measured properly and whose grade is known finds the price it deserves — and the buyer knows what they are getting. We offer this as a contribution to the industry, not as a marketing tool.

What do these values mean?

Results relate solely to the sample provided and are for information purposes; they do not replace an officially accredited certificate.

How it works

    Bring your sample

    Put at least 250 ml of oil in a clean, sealed bottle and bring it to our facility, or send it by courier.

  2. 02

    We run the analysis

    Your sample is measured in our laboratory. Results are usually ready within 1–2 business days.

  3. 03

    Collect your report

    We hand you a report showing the measured values and which grade your oil falls into.

  4. 04

    Let's read it together

    If you wish, we go through the results together and discuss what could be improved in your harvest and pressing process.
