Aroma, taste and smell

Which molecules carry the smell, what bitterness indicates and how defects are named — the full sensory vocabulary.

In olive oil, smell and taste are not a matter of preference but measured data. To qualify as extra virgin, an oil must pass a sensory panel as well as the laboratory. This page sets out the vocabulary used in that assessment together with the chemistry behind it.

In everyday terms: good olive oil smells of something. Open the bottle and you should meet grass, leaf or green almond. Take a sip and the back of the tongue should turn faintly bitter; swallow and your throat should catch. That bitterness and burn are not faults — they are what the oil's beneficial compounds taste like. An oil praised for being smooth, with no smell and no bite, was usually either picked very late or has simply aged.

Where the smell comes from

An olive oil's aroma is not sitting ready in the tree; it is created the moment the fruit is crushed. When cell walls rupture, enzymes meet fatty acids and the lipoxygenase (LOX) pathway fires, converting linoleic and linolenic acid into six-carbon volatiles — every note we call "green" comes from there.

The table explains something practical: malaxation time and temperature decide the aroma. The LOX pathway needs time to work, but too much time and heat drive these compounds off and start oxidation. See cold extraction.

Where taste and mouthfeel come from

Smell comes from volatiles; bitterness and pungency come from phenolic compounds. Those are not volatile, which is why you cannot detect them by nose — only by tasting.

  • Oleuropein aglycone and oleacein — the main source of the bitterness felt at the back of the tongue.
  • Oleocanthal (decarboxymethyl ligstroside aglycone) — responsible for the peppery burn at the back of the throat. It acts on a receptor in the throat rather than on taste buds, so it registers only as you swallow.
  • Lignans (pinoresinol and others) and flavonoids (luteolin, apigenin) — they add to bitterness and to overall body.
  • Hydroxytyrosol and tyrosol — central to the antioxidant effect; see polyphenols and health.

In short, bitterness and pungency are the palate's polyphenol meter. If an oil has neither, its phenolic content is most likely low.

The three positive attributes

Official assessment scores exactly three positive attributes, each on a 0–10 scale.

1. Fruitiness

The smell of sound, fresh olives, and it must be present: an oil with a fruitiness median of zero cannot belong to the virgin grades. Two sub-types:

  • Green fruity — the signature of an early harvest: cut grass, olive leaf, tomato and tomato leaf, artichoke, green almond, green apple, fig leaf.
  • Ripe fruity — forward in later harvests: ripe apple, almond kernel, walnut, banana, floral and sweetish tones.

2. Bitterness

A basic taste perceived at the back of the tongue. It may be light, medium or intense. It is not a defect.

3. Pungency

The peppery burn felt in the throat on swallowing. Pronounced in fresh, early-harvest oils, sometimes enough to make you cough.

Balance and body

Quality is read not from intensity alone but from the ratio between the three. An oil with weak fruitiness and harsh bitterness counts as unbalanced; one where all three rise together is described as full-bodied. Intensity is broadly classed as:

  • Delicate: soft, low bitterness — for new palates and gentle dishes.
  • Medium: balanced — the widest range of uses.
  • Robust: marked bitterness and pungency — pairs with strong flavours.

The defect vocabulary

The panel's real job is hunting defects. If the median of defects exceeds zero, the oil cannot be extra virgin. The principal defects and their causes:

Most of these are born in the time between harvest and mill. Identifying a defect usually tells a producer exactly where the loss happened.

How the panel works

Official sensory analysis is not personal preference but a standard method:

  • The panel is 8–12 trained tasters led by a panel head.
  • Samples are served in dark blue glasses so colour cannot influence the assessment.
  • The glass is brought to 28 ± 2 °C, the temperature at which volatiles are best perceived.
  • Each taster marks defects and positive attributes on a 0–10 scale.
  • The result is computed from the median, with the panel's consistency checked separately.

How aroma changes over time

Oil does not mature; it ages. After bottling:

  • In the first months the green notes — grass, leaf — fade quickly and the oil "softens".
  • Bitterness and pungency recede as phenolic compounds are consumed.
  • Later, rancidity appears: putty and old walnut.

Matching profile to food

  • Robust, green, bitter and pungent: tomato and seasonal salads, pulses, grilled red meat, crusty bread, roasted peppers.
  • Medium-bodied, balanced: white meat, seafood, steamed vegetables, hummus and mezze.
  • Delicate, ripe fruity: desserts and baking, mayonnaise and emulsified sauces, soft cheeses, children's meals.

The rule is simple: match the strength of the oil to the strength of the dish. A robust oil overwhelms a delicate fish; a delicate oil disappears in a spiced dish.
